You’ll Need:


  1. 4 eggs, separated
  2. 1/4 tsp. cream of tartar
  3. 1/2 ripe avocado, mashed
  4. Pinch salt
  5. 2 tsp. toasted sesame seeds


How to Make:


  1. Line a large baking sheet with parchment paper and preheat the oven to 300°. In a large bowl using a hand mixer, beat egg whites and cream of tartar until stiff peaks form.
  2. In a medium bowl using a hand mixer, mix avocado, egg yolks, and salt until smooth. Fold in egg whites and fold into avocado mixture until smooth. Place scant 1/4 cup mixture dollops onto the baking tray, about an inch apart. Sprinkle with sesame seeds and bake until golden and firm, about 30 to 35 minutes.
